1) The cost of purchasing meat and seafood here is very high, plus I missed the market this week as I was in Florida and am not going to purchase meat without knowing the source.
2) I knew Shaun was going to be out of town, thus allowing me creative, experimental kitchen time!
3) I had a somewhat horrific health scare in Florida (I won't get into detail while we are discussing food) and am now admittedly afraid to eat 'unclean' foods.
I filled my cart with vegetables and some staples that we are still working to replace since moving (spices, cleaning supplies, all the good stuff) and was pleased to see a grand total of just $84, compared to my average weekly $100 bill in Pennsylvania.
One goal for the vegetables was an easy hash that could be eaten for any meal. I decided to have this for dinner but as you'll see, it's super versatile. I started with a potato, red onion, green pepper, mushrooms, jalapeño, and spinach.
