So let's talk food. Specifically this beyond easy and healthy version of chicken vegetable soup. With the blistery cold weather we're experiencing now (-25 degrees) this is the perfect compliment.
*One 900mL container low-sodium chicken broth
*One 900mL container organic creamy chicken soup
*One white onion, chopped
*One bunch of celery, sliced
*Three carrots, chopped
*Three handfuls of spinach, torn
*Two chicken breasts, or the meat from one rotisserie chicken
*Salt and pepper, to taste
*Sriracha, to taste
Really, this couldn't be easier. Place everything in the crockpot and cook on low for 4-6 hours. The longer you can allow this soup to cook, the better, as the vegetables will soften more as time goes on. When serving, you can spice this up with sriracha to your liking. Best served with crusty bread!
